MEET EDUARDO
My name is Eduardo Plaschinski and I've been working in the hospitality industry for a while now. Since I was very young I was always extremely passionate about restaurants, hotels, travel and design. I started working in a lot of different areas at hotels and restaurants in Mexico and Canada since a young age and now I am co-founder of niddo in Mexico City. I focus most of my time on the creative and growth side of the business.

When I’m not working, i’m usually traveling somewhere to try a new restaurant or scope out a new hotel. I really love communicating my travel experiences on IG.
MEMORABLE TRIPS
NORDICS — I am a big city guy, I love the Nordics and really enjoy going back to Stockholm and Copenhagen.
— Copenhaguen favourites: Lille bakery for bread and pastries and Et Cetera for their noodles.
— Stockholm favourites: Bakfickan for the Swedish meatballs and Ett Hem for their breakfast in the open kitchen.
PARIS — I always enjoy cities like Paris and each time I go back I see it with different eyes.
— Paris favourites: Dreamin Man for their houjicha latte and pastries and Bistrot Paul Bert for the french classics.
JAPAN — Tokyo and Kyoto make me really happy whenever I go back. Mainly because of the food, culture and design.
— Tokyo favourites: Yakitori Imai and breakfast at Tsukiji Fish Market.
— Kyoto favourites: Yoshikawa Tempura
OAXACA — If I want to travel somewhere closer to home, Oaxaca is always so inspiring for me.
— Oaxaca favourites: Alfonsina for the lunch menu and Cocina de Humo for the tamales.
CHASIGNOLLES, FRANCE — Last spring I visited a small town in the Auvergne Alps region in France called Chasignolles - we stayed at a small auberge there that had really incredible food and a super laid back cozy feeling, will definitely be going back this year or next.

This is probably the most special hotel experience I have ever had. Everything is perfect here. The people, design, food, the smell - you will be impressed at each corner. This is different from a traditional hotel experience which makes it so unique. It is as if Jeannette, the owner of this hotel has invited you into her home and shared all her favorite things with you. From her favorite linens, to bathroom amenities and food.

The owner of Zadig & Voltaire turned his Paris Headquarters into a very beautiful boutique hotel in Ópera. Very good service, impeccable design and the comfiest bed in Paris.

Auberge de Chasignolles
This auberge is very simple and affordable, you’re in the middle of no where in the French Alps with a fantastic restaurant on the main floor and not much to do. You’ll have a fireplace in your room and a decent bed. This is the perfect place to go to eat and drink wine all day, with friends or family.

Casa Remigio - Oaxaca
The famous textile maker Remigio Mestas owns this secret guesthouse and oasis in the heart of Oaxaca City. If you are greeted by him or his wife, they will probably take you on a tour to his studio. The house is filled with lush plants and outdoor living spaces. The bedrooms are colorful and unique. Simple breakfast is served in the mornings.

Gora Kadan
This was formerly the summer villa of a member of the imperial family in Gora, Hakone. Most rooms here are traditional Japanese style with views of the very green surrounding nature. There are private onsens on the hotel grounds. Go here to relax.

Four Seasons Gresham Palace
The Gresham Palace which houses the Four Seasons is architecturally stunning. The grand lobby, the corridors, it’s the most unique FS Hotel I have stayed in.
Budapest
Rosewood Mayakoba
Once in a while I feel like a resort experience and in the Riviera Maya, this is the place to go. Mayakoba is a large and beautiful lagoon that houses four hotels, my favorite is Rosewood. I recommend staying in the lagoon rooms for a couple nights.

TRAVEL WISH LIST
SEOUL — I love Tokyo so much and a lot of people tell me Seoul is just as special, some even think its better, so this makes me very curious to visit.
ISTANBUL — I’m a big fan of Turkish food and also want to try al the Hammam there.
MARRAKECH — Everything looks so inspiring - the hotels, markets, food, it’s been on my list for a while.
ICELAND — Mainly because nature-wise everything seems like from another planet.
